I had such a hard time losing my extra pounds, sometimes I’m terrified I’m going to wake up and have gained it all back. One of the hardest things for me has been finding that healthy balance. But I’ve come to learn that restricting yourself too much and not allowing yourself to enjoy the occasional “cheat meal” only makes things worse in the long run. So as there are days when my sugar craving is strong (I swear I have the biggest sweet tooth ever), I’ve learned to treat myself. I’ve learned that most of the times I can even fit these sweets into my daily macros and that some extra calories here and there are completely okay. Everything in moderation, of course. Which is why the small size of these matcha lime cheesecakes makes them my favorite summer treat.

1 can of condensed milk (Lechera for my Mexican readers)
1 large cream cheese
3 lemons
1.5 tbsp of matcha
Half a cup of water
1 no flavor gelatin packer

Blend together 1 can of condensed milk, 1 large cream cheese, the juice of 3 lemons and 1.5 tbsp of Matcha.
Dissolve flavorless gelatin in half a cup of water (gelatin helps the cake be more stable, I learned this the hard way)
Blend gelatin mix with the rest of the mix
Add mix into mini pie crusts (I used pre-bought)
Let mini pies cool in the fridge overnight or at least 6 hours.
