MAKE-AHEAD MATCHA CHIA PUDDING

We all have those crazy days or weeks (or months!) when we feel like we do not have time to eat healthily. We have so much going on in our heads that trying to meal prep or figure out a way to stay on track seems impossible. So we opt for some quick drive-thru or delivery option or we starve all day only to be hungry enough to eat your whole pantry when you finally get home for dinner. However, I’ve got an easy fix for you. PLAN AHEAD. There are plenty of meals you can make ahead for these type of “emergencies.” My favorite? Matcha Chia Pudding.  It’s not only a super healthy, nutritious and quick breakfast option, but you can also eat this delicious recipe as a dessert or a snack while at work. It’s a great treat that tastes like dessert but packed with fiber, protein, and antioxidants. Besides, there are so many different ways to make chia pudding, that you will never get bored of it! You can make it with almond milk or coconut milk, add cinnamon, cacao, maca or matcha to it, or add your favorite fruit and topping, it’s easy to tweak a recipe to make it fill your craving. This Matcha Chia Pudding is super easy to make and a great option to have pre-made and ready to take on the go!

Ingredients:

  • ¼ cup of chia seeds

  • 1 cup of almond milk

  • 1/4 cup of water

  • 1 tbsp of matcha

  • ½ tbsp of vanilla

  • ½ tbs of stevia or sweetener of choice.

Instructions:

  • Add chia seeds and almond milk to container and stir.

  • In another small cup mix matcha with hot water and whisk until smooth. (This is to avoid matcha from clumping in the chia pudding)

  • Mix both mixtures and add vanilla and sweetener and keep on the fridge overnight!

  • Top with your choice of toppings and enjoy! I usually opt for a fruit as a topping, banana and chia pudding are probably my favorite combination.
