Life is short, your pancake stack shouldn’t be. These are some very wise words. Sadly, restaurant and store-bought pancakes and pancake mixes tend to be loaded with calories, carbs, flour and sugar. Then we have all these new “healthy” versions made with almond or coconut flour, coconut sugar, coconut butter and all the coconut substitute possible. Although they are slightly better, they are still making it hard to eat a big stack without feeling guilty or loading up in calories.
I’ve always LOVED pancakes so when I came upon this recipe I could not be more excited. I have to admit I was a bit hesitant. How can these really taste like real pancakes if they’re made solemnly with cottage cheese (I didn’t even like cottage cheese), egg whites and un-steeled (to me this meant, flavorless) oats. However, I was trying this new thing where I actually try new things, so I gave it a shot. A-M A-Z I-N-G. When I say this was a life changing event for me, I’m not even exaggerating (just a tiny bit.) These pancakes turned into my new favorite breakfast, and one I ate every other day. Then, I started to get creative. I’ve tried this exact recipe as pancakes, crepes, waffles and muffins with slight alterations to keep it interesting and it never disappoints. From cacao, zucchini, banana, peanut butter, maca, protein powder, you name it. You can tweak this recipe based on your goals and nutrition needs and it will still be amazing. My favorite version of these? MATCHA PANCAKES, OF COURSE. No surprise there. Adding 1 tbsp of matcha to my go to recipe has become my new go to and at 59 calories each, I can have my pancakes and eat them too.

RECIPE (makes 10 mid-sized pancakes):

1 cup of low-fat cottage cheese
1 cup of egg whites
1 cup of un-steeled oats
1 tbsp of matcha.

Blend together cottage cheese, egg whites and oats in blender.
Add matcha to mix and blend again.
Add non- stick spray to pan and add pancake mix in
Cook each side on low-med for about 3 min or until cooked.
Stack them up, add your toppings and enjoy!

Note: Be careful with toppings, often this is where we consume most of our calories without realizing. I like to keep it simple with berries or no-calorie pancake syrup by Walden Farms.
